Corcoduse gem

Very good for sour soups this Vegetable broth or crocodile broth!

In the area where I come from, these small, green fruits are known as greens. I know that in other areas they are called crocodiles. Honestly, I don't know what their correct name is, and on the internet they are under both names.

These fruits are used to sour soups when they are green. They can be added directly to soups, in their natural state, or they can be prepared in the form of broth, as in this recipe.

The corcoduşe broth has a sour taste, compared to the tomato broth which has a slightly sweet taste.

Another method of souring soups, in summer, is the green grape method.

Proceed as in this case Vegetable broth or crocodile broth, by boiling the grapes and crushing them.

Green apricots can also be added directly to well-washed soups.

I haven't tried apricots because I can't bear to eat green fruits. But with grapes I tried and give good taste to the soups.

How to prepare corcoduse jam

Wash and clean the corcodus well. Remove the stalks and discard any fruit that is hit or damaged. Place the corcodus in a bowl, alternating layers of fruit and sugar. The last layer must be sugar.

Leave the fruit to soak for a few hours. It is advisable to leave them overnight. Put the fruits on the fire and let them boil. When the composition has dropped by half, pour the fruit through a sieve. Be sure to remove the seeds.

Then boil the composition again for 30-40 minutes. When ready, take the jam off the heat. Put it hot in jars.


Crocodile, apple and carrot jam

Crocodile, apple and carrot jam from: corcoduşe, carrots, apples, sugar, lemon salt.

Ingredient:

  • 600 g crocodiles
  • 200 g carrots
  • 450 g apples
  • 500 g sugar
  • 1 sachet of lemon salt.

Method of preparation:

Wash the corcodus well, then drain and cut them in half, removing the seeds. Peel a squash, grate it and chop finely.

Peel an apple, grate it and squeeze the juice. Mix the apples with the carrots, corcoduşele, lemon salt, sugar and 4 tablespoons of water and bring the pan to a boil.

Let it boil until it thickens, obtaining the much desired jam. Put the jam in jars, close them tightly and put them in the cold in the pantry.


The healthiest recipe with corcoduse jam

I talked in a recent article about the benefits of corcodus and the fact that they are so common to humans that they are often underestimated. During this period, most housewives use corcoduses to sour soups, but few know that a delicious corcodus jam can be obtained from these fruits.

For the recipe with corcoduse jam you need:

  • 3 kg of well-cooked corcodus
  • 2 kg brown sugar
  • 1 medium lemon
  • optional a few mint leaves

How to prepare the recipe with corcoduse jam:

First you have to remove the tails and wash the corcodus very well, then remove the seeds.

In a larger pot place a layer of fruit, cover them with sugar, put another row of corcoduse, another row of sugar, until you finish all the fruit (the last layer must be with sugar).

Then cover the pot and leave it overnight. The next day, put the pot to boil, over low heat and from time to time mix the composition in it with a wooden spoon so that it does not stick. Boil the resulting composition for 30 minutes, adding sliced ​​lemon and optionally a few mint leaves.

Let the jam boil for a while, and when it is sufficiently bound, turn off the heat and put it in sterilized jars.

This corcoduse jam enjoys a lot of appreciation from connoisseurs, it is very healthy and convenient in terms of costs.

Ingredients Corcoduse Jam:

1 kg corcoduse
523 g Green Sugar Gelifiant
200 ml rum (or water if you do not want to use rum)
1 teaspoon grated mocha with preservative powder (salicyl)
200 g walnut kernel (optional I used)

Preparation of Corcoduse Jam:
We put the washed and drained corcodus in the bowl and crush them by hand or with the potato masher. Put 200 ml of rum over the crushed corcodus and boil them for 15 minutes from the first boil.

We put them in a strainer, let the juice drain in another bowl, we pick the seeds with a spoon (it is a slightly more difficult maneuver, but it is worth the effort) and we put the rest back in the bowl where the juice drained and let it boil more. away for about 20-30 minutes until the composition thickens.

Add the walnut kernels (it is optional if we want a lower calorie jam) and Green Sugar Gelling (or sugar if you want, I would recommend using Gelling Sugar) and let it simmer for another 6-7 minutes.

At the end we add the preservative powder after which we put the corcoduse jam in jars, we staple them and we put them between the beds in a dry dunst until the next day.


Note:
If you do not want to use preservatives, sterilize them in water for 20 minutes. Then put them in a dry dunst until the next day.
