Tzatzki sauce has been my favorite for several years, when I discovered it in a tavern in Greece.

The good news is that I don't have to go "to the Greeks" to eat a delicious tzatziki sauce. I can make it at home in just 5 minutes!

Sos Tzatziki

This Greek sauce is a refreshing blend of cucumber and yogurt, very popular in Mediterranean cuisine. Its Turkish variant is called cacik, and in Iran it is known as Mast O Khiyar.

Ingredient:

* 1 cucumber (peeled and seeded) given through a grater
* 1 teaspoon of salt
* 2 cups Greek yogurt (very thick)
* lemon juice
* 1-2 cloves of chopped garlic
* ¼ cup of olive oil.

Method of preparation:

1. Mix the chestnuts and salt in a large bowl, then set aside for 5-10 minutes, then drain the excess juice.
2. Add the rest of the ingredients and mix well.

There are opinions on the internet that say that the original tzatziki does not contain mint or lemon juice and peel and that it is not made with a mixture of yogurt + sour cream. I say it's a matter of taste and it matters too little for loved ones if it's the original recipe as long as they like it. So I put a drop of lime juice (because I didn't have lemon in the house). I like the fragrant-sour note this time. If you do not have Greek yogurt at hand, you can combine normal yogurt (with 4-5% fat) with fermented cream (min 19% fat). If the yogurt looks watery, it would be good to drain it so as not to get a too fluid tzatziki.

Another observation would be the draining and squeezing of the cucumber pieces thoroughly before putting them in the tzatziki. They can also be grated on a large grater, but I cut them with sticks (with a special grater) to feel the pieces through the sauce.

It is worth making double portions of this Tzatziki sauce because it keeps well in the fridge for 2-3 days in a hermetically sealed container and is very good cold. My people also like this sauce with bread. They take their # 8222vadra & # 8221 out of the fridge and eat it with pita corners :).


How to make tzatziki sauce
