MISO MARINATED FLANK

Sometimes I forget how good flank steak is – this just brought the memories flooding back.

Ingredients

  • ¼ cup white miso paste (available at most supermarkets)
  • ¼ cup rice vinegar
  • 1 teaspoon sugar
  • 2 tablespoons soy sauce
  • 1 teaspoon sesame oil
  • 1 large garlic clove, finely minced
  • 1 teaspoon fresh ginger, finely minced

Basting sauce:

Directions

  1. In a small bowl, add all the marinade ingredients and whisk until thoroughly mixed
  2. Put the flank and the marinade in a ziplock bag, seal and refrigerate 8 hours up to overnight
  3. Take steak from fridge 30 minutes before cooking
  4. In the meantime, add basting ingredients to a small bowl and mix until well combined
  5. Pre-heat grill to medium high for at least 10 minutes, remove flank from bag (throw away marinade) cook about 4 minutes on first side for medium rare. Flip steak over and brush the top with basting sauce, and cook 2nd side cook about 3 minutes or so, flip again and baste with more sauce.
  6. Take the steak off the grill, brush with more sauce, cover lightly with foil and let it rest for 10 minutes
  7. Slice into thin strips across grain to serve.

Instructions

Whisk together the Enjuku Koji Miso, sherry, sugar, soy sauce, garlic and ginger. Coat both side of the steaks well in the marinade. Wrap with plastic wrap and refrigerate for at least 4 hours or overnight.

Remove the steaks from the marinade and pat dry with paper towel.

Heat a cast-iron pan or griddle until smoking hot add a little drizzle of oil into the pan, and cook the steak to preferred temperature. After removing steaks from pan, allow to rest 5 minutes and season with black pepper before serving.

Bo Ssam intercostals with Korean flavours

2 kg beef intercostals, also known as rib fingers. This is the meat found between the ribs

Cooking Liquid

Beef Rub – blend all these ingredients together refrigerate until required

1 tbsp Korean fermented chilli paste (gojuchang)

2 tbsp apple cider vinegar

Bo Ssam Sauce – blend first 5 ingredients, refrigerate until required

2 tbsp Korean chilli paste (gojuchang)

4 tbsp Korean soybean paste (doenjang)

2 shallots, peeled and slice

2 stalks spring onions, thinly sliced

Take a large pot. Place the intercostals and the cooking liquid ingredients in the pot and bring to the boil. Reduce the heat and simmer for 1 1/2 hours. Remove the beef and place it on a baking tray. Add a weight on top so it stays flat. Cool it in the fridge.

Once the beef is cooled, trim off the excess fat. Cut it into 4cm sections and rub with the beef rub. Place the beef on a tray and roast in BBQ/oven at 220C until the top is caramelised, about 15 minutes

Once intercostals are caramelised, let them rest for 15 minutes. Then slice thinly and top with the Bo Ssam Sauce and thinly sliced spring onions

Winter is here and soup just sounds so cozy! I&rsquom not quite ready for the overload of all things peppermint and gingerbread since I&rsquom still recovering from the Halloween candy, so I thought I would keep things savory today. This soup has deep flavors and is sort of like a chicken noodle soup for the Asian food lovers out there. Plus, the little sriracha gives it a kick to kick any oncoming colds out! Well, I don&rsquot know if it really has the power to do that but it sure feels like it if you put a ton in there!


22 ingredients, 30 minutes, Servings: 4 to 6

Ingredients:

  • 1 Swift Boneless Pork Loin
  • Favorite pork rub
  • Pink salt
  • Cayenne hot sauce
  • 1 whole pineapple
  • 1 red onion
  • 1 bundle cilantro
  • 1 red bell pepper
  • 1 jalapeño pepper
  • 1 clove garlic
  • 1 lime

Pineapple Salsa:

  • 2 cups diced fresh pineapple
  • 1 cup diced red pepper
  • 1/2 cup chopped cilantro
  • 1/4 cup chopped red onion
  • 3 tbsp. chopped jalapeño pepper
  • 1/2 tsp. minced garlic
  • Juice of 1 lime
  • Salt to taste

Maple Bourbon Sauce:

1) Slice a whole pineapple into 1/2-inch slices.

2) Remove 1 Swift Whole Pork Loin from the package, score the fat cap side, slice into 2-inch pork chops, add cayenne hot sauce as binder, then season with your favorite pork rub and pink salt.

3) Make the pineapple salsa using diced fresh pineapple, diced red pepper, chopped cilantro, chopped red onion, chopped jalapeño pepper, minced garlic, juice of lime, and pink salt, then mix evenly in a bowl.

4) Make the maple bourbon sauce using BBQ sauce, maple syrup, and bourbon, then warm over fire on the grill.

5) Place the 6 thick-cut pork chops and fresh pineapple slices on your grill over an open fire and cook for 5-6 minutes.

6) Flip the chops and cook another 5-6 minutes or until 140-145 F internal temp for medium meat.

7) Raise the grill grate and sauce each side of the chop with the maple bourbon sauce and cook an additional 1-2 minutes on each side.

8) Remove chops and pineapple from the grill and rest for 10 minutes.

9) Slice the chops into succulent strips, top with the fresh pineapple salsa, and enjoy the delicious maple bourbon pork chops and grilled pineapple
